Have you ever tried making some with some unconventional fillings? A friend of mine in Japan used to make gyoza with cheese and kaki (persimmon) slices in the middle as a dessert/snack kind of thing, and I have made cheeseburger potstickers that have come out quite nice. My brother really doesn't like cabbage, so it was an effort to get him to try them, but it's fun to do something different every so often.
