If you want the real thing you can always use some
Oaxaca. But being that Oaxaca is hard to find, I recommend Monterey Jack mixed with a mild cheddar. The two cheeses blend well together and melt up very nicely.
I've used the Sargento's Mexican cheese blend too. It's pretty good and comes pre-shredded! :P
