I was using GIMP way before I started with Photoshop, though Photoshop does have a much better interface, especially CS3. GIMP operates in several windows on the desktop, whereas Photoshops before CS3 contained smaller windows inside a main window. The two are basically the same, except you'll find tools in different places.... and one costs around £700 more than the other

On the topic of 2007:
In terms of the interface, I personally didn't have much of a problem adjusting to it, and I still use 2000/2003 with ease at school. I agree with Cat88 on the .docx thing, just seems like a pointless exercise to make an entirely new format. However, that said, I've had no problems with reverse compatibility. If I create a Word 2007 document at home (saved as .docx), it works fine when I open it up on 2003 at school.

To me this is an arguement between old and new. If someone asked me to compare XP to Vista, I'd say that XP is better because I've been using it for years and I'm comfortable with it. Vista is intuitive and productive, but I still find myself spending minutes finding programs using the new start menu. Matter of personal opinion I guess.
