Hi,
I'm not so used "to use" JoyToKey (I'm using AutoHotKey, with this you can make some "advanced" script). But I have the impression that something is wrong in your mapping...

I load up o2mania and viola. It doesn't work. I can press any KEYBOARD key (out of my specified SDF[SPACE]JKL) and the columns will light up.

This is really not normal. I don't understand how by pressing any KEYBOARD keys (out of your o2mania configuration) it will generate an event in your specified SDF[SPACE]JKL. Somethinng wrong here.

Anyone have any idea why o2mania isn't recognizing my controller?

O2mania for sure doesn't recognize your controller, it's because of that you use a key mapping program. And I don't see the point why o2mania will not respond to JoyToKey event (it should work... I think... never try it with JoyToKey).
Maybe to test if JoyToKey works well, for example try to map all your boutons of your game controller to a specific letters in your keyboard. Then use wordpad to write some text and press your controller keys. If it works in wordpad and not in o2mania (it means than joy2key is not "compatible" with o2mania...and really I will not understand why becuase JTK just send KEYBOARD key pressed events).
At worst, try to use AutoHotKeys (but be carefull it's a bit more complicated so you need to read the documentation).
