One clear example of differences between regions is DDR Extreme.
The japanese version is almost exactly like the arcade version in appearance and songlist (if I remember well, it's one of the PS2 DDRs that has the biggest amount of songs). The US version is completely different, starting from the theme, taken from DDR Festival.
