Morbid Angel, Death, and Possessed were all around before CC, and each has its own identity. CC, meanwhile, set every damn cliche for every knock-off death metal group to follow, and then indulged in those cliches while offering nothing new for over 20 years.
And yes, those modern "brutal" death metal bands are also quite generic. Just because they haven't been around as long as CC doesn't make them any more or less bland, inoffensive, and boring.
The good news is, thanks to the internet age, some people are finally discovering that Gorguts and Demilich had some interesting things going, and we're starting to see a few bands follow up in that style. Cosmic Atrophy and Ulcerate are doing a great job with that, while the Quebec tech-death scene is one such group in their style worth following. Bands like Quo Vadis, Neuraxis, and especially Martyr (led by Daniel Mongrain, who played in Gorguts on From Wisdom To Hate) may enjoy showing off their skills, but do so in a way that doesn't just rip off Necrophagist.
There's plenty of non-generic death metal out there, both old and new. You just need to dig for it, as with practically any other musical genre. Quote: |

Gorguts' first two albums are more "standard" death metal (but still quite awesome), while their later two, Obscura and From Wisdom To Hate, go in a bit stranger direction. If you like what you heard with the FWTH track, you might want to check out these guys: YouTube - MARTYR # WARP ZONE + VIRTUAL EMOTIONS
As mentioned, Daniel Mongrain played guitar on FWTH, and this is the band he does most of his work with. The vocals aren't exactly top-notch, but they aren't terrible and the guitar work is just awesomely alien. YouTube - Ulcerate - Everything is Fire
Ulcerate is a newer band out of New Zealand, but they're already one of my favorites. They take a more atmospheric view of Gorguts' Obscura, and, well, the results are mindblowing. It's bizarre, compelling, and impressive as hell to imagine trying to play. YouTube - The Chasm - Fiery Rebirth
The Chasm is a Chicago-area band, though they started in Mexico city back in 1989. A bit less out-there than Ulcerate, but great stuff nonetheless. Each album has a different feel to it, but they haven't released anything I wouldn't call great.
