Best way to make egg fried rice?

Default Best way to make egg fried rice?

I've found a few recipies on the internets, but I'm trying to find one that's as close to what you get from a chinese takaway as possible. My dad tried to make some a while ago, and he added about half a jar of five-spice, and the rice was stodgy. Not nice.

What about searching for recipes like chicken fried rice and then modifying parts of it to suit your taste? I don't think I've ever seen it called "egg fried rice" on a menu.

I quick fries egg in oil, breaking it up a bit as it thickens.
I doesn't cook it to complete done -- he removes it while still moist-- almost under cooked.
I then "reserves" it -- puts in in a plate
Re-uses same pan to fry the rice, adding shrimp, chicken, any veggies you want and soy sauce to taste/color.
As this warms/fries -- just before done, he adds the "reserved" egg and mixes it in -- works great.

What I do I took from a cooking manga. Works suprisingly well, makes the rice quite fluffy.

Basically just crack a few eggs in a bow, mix it around a bit, put the rice in, and let it soak in the egg mixture for awhile, let's say about 5-10 minutes. Then you fry it normally. The rice comes out thin and fluffy, so the flavour won't be as rich.

My apologies if that was in weird English, I only know the cooking terms in Chinese.

I usually just use one of these :



In one pan (or a wok), just make some scrambled eggs, add rice, add seasoning and BAM youre done
