Japanese curry-- how do you make it?

Default Japanese curry-- how do you make it?

For those of you who enjoy making this dish, what kinds of things do you put in there? I like to use sauteed white onions and red potatoes, chicken, baby carrots, and Golden Curry medium hot curry mix. I tend to put some soy sauce and sugar in the frying pan when I'm doing the onions and potatoes, and although it takes 3 hours to complete the dish, I think it tastes really good. Does anybody have a particular way of doing it that they are proud of?

My mom puts huge chunks of beef. Cut into cubes, boiled like 4 times of 15 minutes boil-sessions and then letting it sit. She also randomly adds ketchup and other spices to thicken it. Normally slices of white onion and carrots and just mild-hot curry (whatever they have at the Japanese market), not a lot of stuff like you.

Just wondering, is it possible to make Japanese curry using natural stuff ie. no curry mixes at all?

It is. I can understand why you might not want to use the boxed stuff. It has some preservatives and emulsifiers and stuff like that, I think. There are definitely recipes out there, but curry already takes me 3 or so hours to make so I would be rather unwilling to try making my own seasonings. If you read Japanese I would try searching ラレー and see where that gets you.
