Default Mexican Cheese?

Does anybody know what kind of cheese Mexican joints put in their food? I tried making quesadillas the other night, but the cheese was totally bland (I tried using mozzarella cheese... bad idea. >_>). I was disappointed, because I made the chicken and mushrooms to put in it good. So I must know what cheese to use to make them perfect...

THERE CAN BE ONLY ONE... badass quesadilla.

Theres actually a pack of shredded mixed cheese called (you guessed it) Mexican blend shredded cheese by Kraft that tastes amazingly good especially when melted over things try and find it at your local supermarket they should have it there.

If you want the real thing you can always use some Oaxaca. But being that Oaxaca is hard to find, I recommend Monterey Jack mixed with a mild cheddar. The two cheeses blend well together and melt up very nicely.

I've used the Sargento's Mexican cheese blend too. It's pretty good and comes pre-shredded! :P

I dunno if you know Queso Panela, Queso de Hebra or Queso Jarocho.

Best mexican cheese IMO

Anyone know the name of the mexican cheese they use to put on sopes? Cause that cheese is really damn good and I always get a couple of em for that.

Goodness.

There are kinds of cheeses used for those in tacos but usually...when one associates cheese in Mexican food, it's generally Melted Cheese used in Nachos that is the common association.
