Default Migas?

Hey guys so there's this dish known as migas. It is a traditional Spanish dish, mainly composed of fried corn tortilla bits and eggs. It is good if you have some stale corn tortillas left over. So this is my first time being on the Food forum, and I figured I should share it with you!

2 eggs
2 corn tortillas
some Crisco shortening
Salsa, beans, onions, other toppings you may like
salt and pepper

1. Get a pan and melt some Crisco shortening in it. The bottom should be covered all the way; not too much to deep fry the corn tortilla bits. Heat should be on medium.

2. Tear up your corn tortillas into bits of bite-sizes. You can put it into a bowl to put all the bits in at once so they all cook the same.

3. Put all of the bits into your pan. Using a spoon or other instrument, stir the bits around in the oil. Wait until desired crispyness, recommended golden brown.

4. Now crack your eggs into the pan. If you are scared of the hot oil like me, crack them into a bowl, then pour the eggs into the pan.

5. Cook eggs until scrambled and firm.

6. Turn down your heat and add the salt and pepper. Now add the other toppings and cook them accordingly.

Just some things to remember, you must fry up your tortilla bits before you cook the eggs, or else your tortilla chips won't be crispy. Fry up your onions with your tortilla chips if you are using them in the dish. Also, its a good idea to add in your salt and pepper while the dish is still cooking so the salt and pepper get embedded into the eggs. One last thing, make sure you cook your tortilla chips to the desired colour before you cook anything else, such as the onions.
