The final evolution of the penguin starter looks ULTIMATE. Badass too. I'll definitely start with that one.
The Monkey King one is for me. Although it appears he might be the weakest out of the 3, since the Grass/Ground type negates its fire and owns it with Ground, while the Water one just beats it anyway.
The grass starter seems like a cheap Bulbasaur ripoff, I might add.
Would this by any chance be a Rhydon evolution?

if that penguin starter evo is anything like Blastoise in defence judging by his girth the fighting weakness won't matter once he does Hydro Pump or something to that fire monkey. But then again the final evo for all of them have weaknesses to each other.
Oh come on, the grass one is cool. It has a tree growing on it. You could like, build a tree fort in there, and have it take you places without even leaving home. It'd be awesome.
