Last time at Golfland, I got a D on A[7k] cause I couldn't find how to switch speeds during a song 
Also, do some Happy Sky machines not have Little Little Princess or something? I play the one at SVGL and whenever I have Extra Stage, it's still not there.

I don't think Happy Sky has that feature.
It was only implemented in the video arcade version when Distorted got released.
But before it, there is no way you can change speed in the middle of a game (via the hold start button method)

Little Little Princess has to be unlocked, so non-unlocked Happy Sky machines (e.g. most of the HS machines in the US) will not have it playable unless it was either unlocked before the arcade got it or if the arcade performed some hackery on the drive.

if you DO play on DD or GOLD, to change speed mods in-song you hold start and then press white keys to move it down one .5 speed mod or black keys to move it up one .5 speed mod. | |

I've seen a DOLCE vid, and he holds the start button and turns the turntable to move the speed up and down. Is this another way?

I think you have to press the white keys while holding the start button to decrease the speed mod, and black keys while holding the start button to increase it.

just hold start (which is right under the screen), and use black to go up, and white to go down. This only orks on DistorteD and GOLD releases for the arcade however. | |

On DD/GOLD AC, hold Start and press the black keys to increase speed and the white keys to decrease it.
