Most people get fairly profecient at playing 2 handed, then start playing 1 handed to just do it.
I started out playing 1 handed, and soon found out that playing 2 handed made things 100% better.

Normally I play 1P side two handed, but sometimes I'll still try one handed, 2P side two handed or even 2P side one-handed just for fun or to mix things up - and if you ever hit a wall, experimenting like this can be beneficial, no matter what your most comfortable side/amount of hands is. There's always 14 key as well
As for how scores are regarded within the worldwide community, though one handed scores are definitely impressive, I think as far as rankings and all that go, both playstyles are considered equal.

And if you're planning on going for 14 Keys, keep them around the same level.

Whenever I feel like playing 2 handed, I notice that my left hand is always trailing behind and can barely do anything. But I'd think that one handed play would be best to strengthen your non-dominant hand.

I tend to only use those 2 fingers on each hand often, but I'm starting to get into harder songs with 4 - 6 buttons at once, forcing me to find another playing style.

Lots of good players use their pinkies, too. A general rule seems to be that the more fingers you can use when you need them, the better off you'll be.

Anyways, I also use my thumb and ring fingers all the time for the white keys obviously
But, when I have to do Scratch+1+3 I use my right thumb or index to hit 3 since my brain can't seem to compute those for left hand

I don't use my thumbs on easier stuff, but on hard stuff like R5 I will. I do pretty well at Scratching too.

But i can only clear 5-6 star songs 1 handed at the moment, and get A only on V on L7 mode.
2 hands play definltely makes life alot easier. I might mention as well then that Pinky Scratching was another milestone for me that made my IIDX playing A LOT easier!
but it's still not as awesome looking as playing all 7 keys using just 1 hand!
