There's nothing wrong with your technique because I do the same thing. You just need to get used to doublepicking, that's all -- try tapping your foot to the beat. Best thing you could do is to "flick" the upwards pick with your index finger to simulate a downpick so that it feels like you're downpicking the whole song.

I can double pick basic-advanced dragon blade and desert rose, but on light so it's only mediocre, and only when I need to not the whole song... Normally I space my fingers out from below the pick so that they aren't touching it and I'm not just holding on to it, but does that become necessary?

You should never have to hold your pick. Doing so decreases your playing accuracy

Does the controller quality count? We have a v3 machine with 5 year old guitar which has v3 stickers, so would the pick sensor be slightly hypersensitive to double picking?
|
Controller quality matters so much as it being an additional hurdle to your playing -- do you get mispicks, do the frets not work? That's gonna make your scoring a little bit harder...
Aside from that, the only things that I could think of are stiff fret buttons and an "overused" pick. The latter loses the "springiness" of a normal pick and tends to act more like the KOC's pick... which I personally prefer, but takes getting used to.

Do all songs after Agnus Dei require double picking?
|
You will eventually have to doublepick because it's almost humanly impossible to downpick some of them (ie: the 99s, DDs, Forever Free... XD)
Take your time learning to doublepick though -- doublepicking allows you to
play those songs, but your downpicking accuracy still determines your score
