Unfortunately, I think you're going to be pretty hard-pressed to find any GF charts of reputable quality outside of GDAMania's casket site, which is a real shame. The way I always looked at it, it's much easier to tab an unofficial chart for DTXMania's DM side because each drum is basically it's own unique and recognizable part of the song and as far as drumkit games go, a snare hit is a snare hit, likewise with cymbals, toms, etc... Such is not the case with three buttons used to play endless single string notes and chords of various frettings. Unless a simfile maker wants to just take the easy (and usually boring way out) and just chart higher sounds closer to the body and lower sounds closer to the head, then you get a very complex and often confusing puzzle of what-goes-where. I think that in itself kills a lot of ambition for GF simfiling (along with the whole "three buttons can't really convey why I really like this song" thought process). What is a generally simplistic if not tiring task for drum tabbers becomes a very drawn out and thought out chore for guitar tabbers.
As far as that lag goes, it might be overtaxing your computer, then. I don't have problems with all visual options on (full color, videos, fancy burstin' notes, etcetcetc...)
